Ingredients:
- 2 eggs,
- 1 c. sliced cucumber,
- 1/3 avocado,
- 1/2 c. cherry tomatoes,
- 1/2 c. sliced bell pepper,
- Handful baby spinach,
- Fresh arugula/rocket,
- 1 tsp. olive oil,
- A squeeze of fresh lemon juice,
- Sea salt, cracked black pepper (to taste).
- Boil the eggs in a pot of water on the stove for 5-8
minutes - Slice the red bell pepper, cucumber, and tomatoes.
- Toss the chopped veggies, rocket, and baby
spinach with fresh lemon juice, olive oil, sea salt
and black pepper - Top the salad with halved boiled eggs and
avocado slices. Serve fresh and enjoy!
